I'm wanting to get a solid grasp of this whole "picking up where we left off" concept and how the natal planets describe this, as well as how/what the role their South Nodes play.
JWG speaks to the natal chart correlating to how we as Souls are picking up from where we left off before this incarnation. He described the natal Pluto as the archetype that speaks to what the Soul is bringing from the past that is relevant to separating and returning desires unfolding within the current incarnation at this stage of the Soul's evolutionary journey.
My question is - if this is true, then is it correct to read --all-- of the planets in the chart the same way, excluding the Sun? That is to say, the natal position of all of the planets in the chart show, by their respective archetype, how the person is picking up where the Soul left off previously?
Further, if this is so, then is it correct to see the South nodes of ALL planets, including Pluto, as additional and relevant information about the specifics of *how* the Soul was experiencing the past as per the natal planet shown in the chart?

Yes, and also the 'why' of what the Soul was experiencing in the past. And, again, this is exactly what JWG taught and wrote about. One short book that pretty much puts all this together is the JWG book called The Structure Of The Soul. Here are the three chapters in that book:
